Did you know that New Zealand is actually part of a sunken continent? Zealandia, the piece of continent that now makes up New Zealand, was once part of the Australian Continent, but it was rifted away from the mainland and, as that happened, it sank below the waves.26 Million years ago Zealandia had all but completely disappeared beneath the ocean. But, about 23 million years ago the motion between the Australian and Pacific plates changed, causing the sunken continent to start to rise out of the ocean again. Over the next several million years the increase in tectonic forces and volcanism created the many volcanoes and beautiful landscapes on the islands of New Zealand. These tectonic forces are still at work today in New Zealand as evidenced by the 2010 Canterbury earthquake, and the 2011 Christchurch earthquake. -NF

Taking a look at lunch: Japanese tomato with spinach, egg and mozarella on grilled bread
Everyone loves caprese salad. It’s a universally acknowledged fact. So why not make something like it into a lunch? To get in some protein I added a boiled egg, and for nutrients I subbed out the basil leaves for some spinach - and it was so delicious.
- Boil some spinach, and then chop it finely
- While you’re at it, boil an egg
- Brush a piece of bread with olive oil and grill it on both sides
- Put the mozarella onto the warm bread, top it with the boiled egg and spinach and finally the fresh, juicy tomato. Yumm.
